
Description
To create the delicious Tuna Fillets in olive oil, the fish is taken from the cold storage room, cut into sections, bled in running water, placed in AISI 316 stainless steel baskets and cooked not by steaming but in water and salt. This method helps maintain its organoleptic qualities intact and prevents the loss of a large portion of its proteins. After cooking, the product is cooled and, manually, a meticulous skinning and removal of bones is carried out. The cleaned sections are then cut into fillets and placed inside glass jars of various sizes or in large containers for Catering use. This phase is followed by filling the containers with olive oil or water, if the product is required “al naturale” (in brine), sealing the lid with an automatic capping machine, and sterilizing and washing the packages. The final phase involves labeling the jars with an automatic labeling machine, packaging the containers in insulated boxes, and storing them in designated rooms.
